Banana Applesauce Muffins image

I made these into mini muffins and baked them a little less. They stuck to my papers so next time I will try spraying the pan instead. I was looking for a banana/apple recipe and this one is really good. The banana flavor is great. It comes from the AMA Family Health Cookbook. The picture I took was better than this...guess I...

Number Of Ingredients 11

2 c all purpose flour
1 1/2 tsp baking powder
3/4 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 1/2 c bananas about 4
1 egg
4 Tbsp oil
2/3 c brown sugar, firmly packed
1/2 c applesauce, unsweetened
1 tsp vanilla extract

Steps:

  • 1. In a bowl combine flour, baking powder, baking soda, salt and cinnamon. Mix together.
  • 2. In a separate bowl combine bananas and egg, mix til smooth; add oil, brown sugar, applesauce and vanilla. Mix thoroughly.
  • 3. Add banana mixture to flour mixture. Mix together, do not over mix. fill muffin pans and bake 375 degree for 22-25 minutes.
