Baked Zucchini Chips image

This recipe is for one serving- increase ingredients accordingly with how many zucchini you want to prepare.( try other veggies too). Remember wash , cut off ends , but do not peel and slice as thin as a quarter, about 1/8 thick. Place in ice water for about 1 hour..drain and pat dry. I have no idea where I got this recipe- but...

1 medium zucchini, washed not peeled
canola oil spray
seasoned salt or your favorite seasoning

Steps:

  • 1. Preheat oven to 225^. Line a jelly roll pan with parchment paper and spray with canola oil. Set aside.
  • 2. Slice zucchini into thin medallions, about the thickness of a quarter. Lay slices on prepared paper lined and sprayed pan. Spray tops with oil. Sprinkle with seasoning of choice, not too much as vegetables shrink and too much gets concentrated on the veggie.
  • 3. Place in oven for 45 minutes-rotate and bake 30-50 minutes until chips are browned and crisped to your liking. Eat within a few hours of taking them from the oven- as they get chewy if left out- unless you want to re-crisp them in the oven.
