Baked Yellow Rice & Vegetables image

This recipe gives rice a kick!

Number Of Ingredients 12

2 c long grain rice, uncooked
1 small bell pepper; diced
1 small onion; diced
1 tsp garlic powder
1/2 tsp ground turmeric
1 Tbsp light olive oil
3 Tbsp butter, unsalted
1 can(s) chicken or beef broth(14.5 oz.)
1 can(s) water(fill broth can) plus 1/3 c.
1 c carrots, julienned
1 c broccoli, frozen
salt and pepper to taste

Steps:

  • 1. Preheat oven to 350*
  • 2. Add butter and oil to cold skillet then heat on medium heat. Add onion and bell pepper. Saute one minute. Add rice and turmeric; stir. Pour in broth and water, adding seasonings and other vegetables.
  • 3. Bring to boil stirring once more. Pour ingredients into 13x9 casserole dish. Bake for 30 minutes or until liquid is absorbed.
