BAKED SWEET POTATO FRIES WITH AVOCADO DIP image

Sweet Potato Fries
-2 lg sweet potatoes cut into 4 inch long & 1/4-1/2 inch thick fries
-2 tbsp olive oil
-1 tsp smoked paprika
-1/2 tsp ancho chili powder
-1/2 tsp ground coriander
salt & pepper to taste
Avocado Dip
-1 Hass avocado
-1/3 cup mayonnaise (can use yogurt, low or non-fat)
-1/3 cup cream cheese, softened to room temperature
-1 jalapeno, seeded & chopped
-2 green onions, white & light green parts only, chopped
-juice of 1 lime
salt & pepper to taste

Steps:

  • Sweet Potato Fries -Preheat oven to 450 degrees F -Place sweet potatoes in large bowl & toss with olive oil until coated. -Add paprika, chili powder, coriander, salt & pepper. -Toss to coat evenly -Arrange fries in single layer on baking sheet lined with aluminum foil. -Bake on lower rack of oven for 20 minutes until fries soften. -Move baking sheet to upper rack of oven for 10 minutes more, until fries are crispy. Avocado Dip -Place avocado, mayonnaise, cream cheese, jalapeno, onion and lime juice in blender or food processor. -Blend for 1 minute or until a smooth paste is created. -Season with salt & pepper. -Serve as dip with fries.
