Baked Squash image

This squash is like Dixie Cafe squash casserole. Great dish!

Number Of Ingredients 7

5 medium yellow squash
1 c bread crumbs
1/4 c sugar
2 Tbsp onions, chopped
2 eggs, beaten
2 oz butter; 1/2 stick
salt and pepper to taste

Steps:

  • 1. Cut tips off squash. Cut each onto 3 or 4 pieces. Put into pan with enough boiling water to cover. Cook until tender. Drain squash and mash. Combine with eggs, bread crumbs, butter, sugar, salt, onion and pepper. Pour into lightly greased 3- quart casserole. Cover with light layer of bread crumbs.
  • 2. Bake @ 350 until lightly browned.
