Baked potato Casserole image

This a family favorite at our house! You can add some grilled chicken with it and make it a meal! Also great reheated the next day!!!

8 - 10 potatoes, bakers
8 - 10 slice bacon, cooked and then chopped
1 c butter, softened
2 c cheddar cheese, shredded
2 c sour cream
1 Tbsp onion salt
1 Tbsp salt and pepper or to taste
1/4 c chives chopped (if desired)

Steps:

  • 1. Wash and dry potatos. Pierce potatos with a fork, oil your hands and roll potatos in oiled hands to cover. place on baking sheet and salt both sides of potatos. Place in a 450 degree oven. Bake 30 minutes, turn potatos and bake an additional 20-30 minutes or until they have some give when touched. Remove from oven and let cool just enough to handle.
  • 2. Split the potatos in half length-wise. Scoop out the center and put the potatos in large mixing bowl. Reserve a few potato skins. Brush the reserved skins with melted butter, then chop into small pieces and return to oven Bake 5-8 minutes.
  • 3. In the mixing bowl with potatos, add all the butter. Mash the potatos and butter with potato masher. Add onion salt, pepper and salt. Stir. Taste. Adjust seasonings. Add sour cream, bacon and cheese, and chopped potato skins, stir to mix well. Put potatos in a buttered 13 X 9 pan, and return to oven. Reduce heat to 350 degrees, bake appox. 30 more minutes until potatos are browned and bubbly.
