Baked Oatmeal Carrot Cake Version image

DH loves baked oatmeal so I am always looking for new ways to make it. This is my version of a recipe I fond on the internet. *10 minute cool time not included.

Number Of Ingredients 13

2 c rolled oatmeal, not instant
1 1/2 tsp baking powder
1/2 tsp salt
1 c milk, 1%
1/2 c egg beaters egg substitute
1/2 c applesauce, unsweetened
1/8 c splenda brown sugar blend
1 tsp vanilla extract
1 Tbsp cinnamon
1-1 1/2 c carrot, shredded (2 carrots)
8 oz crushed pineapple
1/4 c raisins
yogurt or milk for topping

Steps:

  • 1. Combine wet ingredients.
  • 2. Add dry ingredients.
  • 3. Bake in Pam sprayed 8" pan at 350 F for 35-45 minutes.
  • 4. Let cool about 10 minutes to set-up a bit before serving.
  • 5. Serve topped with yogurt or milk.
