4 medium potatoes, cooked
1 cup mayonnaise
1/2 cup sour cream
1/4 cup milk
2 eggs, beaten
2 teaspoons Dijon mustard
1/4 cup shredded cheddar cheese

Steps:

  • Mash potatoes with mayo, sour cream, milk, eggs, and mustard.
  • Spoon into greased pan and top with cheese.
  • Bake at 350 degrees for 20-30 minutes or microwave on high 7 minutes.
