Steps:
- Preheat your oven to 475°F Cut the potatoes into sticks. Soak in water for 10 minutes then drain and pat dry.
- Toss with 2 T. oil and your seasonings.
- Coat a cookie sheet with a the rest of the oil. Bake the potatoes for about 45 minutes, checking after the first 20 minutes, then every 10 minutes after that.
