Baked Breakfast Burritos image

This went over really well with guests. I noticed when I took it to the potluck (several hours after making it) that it tasted better then when I served it right after preparing it. This makes me think that it is a great recipe to prepare night before. Also easily converted to vegetarian.... just leave out bacon. The burritos were delicious, but they were a bit too spicy for me. I'll use less chili powder next time.

These burritos are a bit bland. I think I'll add some more seasonings next time.

These burritos are a great way to use up leftover ingredients. I always have a few tortillas and some cheese in my fridge, so I can easily whip up a batch of these.

The burritos were good, but I found the eggs to be a bit overcooked. I'll try cooking them for less time next time.
