BAKED APRICOT CASSEROLE image

Number Of Ingredients 4

4 15-oz. cans apricots, drained
1 1/2 cup light brown sugar
2 sleeves Ritz crackers
2 sticks butter

Steps:

  • Preheat oven to 300 degrees. Butter a 2 quart casserole. Layer 1/2 apricots on bottom of dish. Layer 1 sleeve Ritz crackers. Layer 2nd 1/2 of apricots. Melt 1 1/2 sticks butter; stir in brown sugar; pour over layers Layer 2nd sleeve Ritz crackers. Melt 1/2 stick butter and pour over crackers. Bake for 1 hour.

I'm not a big fan of apricots, but I decided to try this casserole anyway. I'm so glad I did! The apricots were perfectly complemented by the cinnamon and nutmeg. I'll definitely be making this again.

I had some trouble finding dried apricots, so I used fresh apricots instead. The casserole turned out great, but I think it would have been even better with dried apricots.
