Bahamian Coconut Bread image

Serve bread with honey, or use as a dessert by topping a slice with ice cream and amaretto. From the Calypso Cafe.

Number Of Ingredients 10

3 c unbleached flour
2 c coarsely grated fresh coconut
1 c sugar
1 Tbsp baking powder
1 tsp salt
1 tsp nutmeg
2 eggs
1 c milk
2 Tbsp butter, melted (or oil)
1 tsp vanilla

Steps:

  • 1. Combine flour and next 5 ingredients in a large bowl.
  • 2. In a separate bowl, beat together eggs and remaining 3 ingredients.
  • 3. Stir egg mixture into dry ingredients.
  • 4. Pour batter into a greased and floured 1-inch cast-iron skillet.
  • 5. Bake at 350F for 45-60 minutes or until a toothpick inserted in the center comes out clean.
  • 6. Cool in skillet.
