Steps:
- Arrange an oven rack in the top third of the oven and preheat the oven to broil.
- Lay the bagels out on a sheet pan. Toast them briefly in the oven, keeping a close eye on them as you want them to just brown. Spoon a healthy amount of warm Tomato Sauce over each bagel and top with some mozzarella, Parmesan and sausage if using. Return the bagel pizzas to the oven and turn the broiler off. They should be perfectly cooked after about 3 minutes. Cool for another 3 minutes, then serve.
- Put a saucepan over medium heat, add the olive oil and garlic and saute until the garlic starts to color and become fragrant, about 2 minutes. Add the tomatoes, oregano and a healthy amount of salt, give a good stir and then cook over medium heat for about 30 minutes. Allow to sit for at least another 30 before checking the seasoning and using for whatever purpose you'd like.
