Avocado Quinoa Salad with Chipotle Lime Dressing image

I found this on the Cooking Quinoa website and I have subscribed to Wendy's eBooks. This is called a salad but it's really a meal. I used black beans instead of the pinto and it was DELISH! :)

I'm not a big fan of avocado, so I wasn't sure if I would like this salad. But I was pleasantly surprised! The avocado added a creamy texture and a mild flavor that I really enjoyed.

This salad was a lot of work to make. I don't think it was worth the effort.

The chipotle-lime dressing was too spicy for my taste. I had to dilute it with some plain yogurt.

I found this salad to be a bit bland. I think it could use more seasoning.

This salad is a great make-ahead meal. It's even better the next day, after the flavors have had a chance to meld.

I love that this salad is so versatile. You can add or remove ingredients to suit your own taste. I often add black beans or corn for a heartier salad.

The chipotle-lime dressing is the star of this salad. It's creamy, tangy, and a little bit spicy. It's the perfect complement to the avocado and quinoa.
