Yield Makes 4 servings

Number Of Ingredients 5

4 cups chicken broth
1/4 cup uncooked orzo (or rice or pastina)
Salt and pepper to taste
3 eggs
3 tablespoons lemon juice

Steps:

  • 1. In a large saucepan, bring the broth to a boil.
  • 2. Add the orzo, rice, or pastina and cook until tender but still al dente, about 7 minutes (20, if using rice). Season with the salt and pepper and reduce heat to low; simmer.
  • 3. Meanwhile, in a medium bowl, whisk together the eggs and lemon juice until smooth.
  • 4. Ladle about 1 cup of the hot broth into the egg-and-lemon mixture, then whisk to combine.
  • 5. Add the mixture back to the simmering saucepan. Stir just until the soup becomes opaque and thickens as the eggs cook, 1 to 2 minutes. Add more salt and pepper, if desired, and serve.

This soup was just okay. It wasn't bad, but it wasn't anything special either. I probably wouldn't make it again.

I'm not sure what I did wrong, but my soup turned out really watery. It didn't have the thick, creamy texture that I was expecting.

This soup was a complete disaster! The eggs curdled and the soup was way too sour. I would not recommend this recipe to anyone.

I found this recipe to be a bit bland. I think it needed more salt and pepper. I also would have liked to see more vegetables in the soup.

This soup was a bit too tangy for my taste, but I think that's just a matter of personal preference. The soup was still very flavorful and I would definitely make it again, but I would use less lemon juice next time.
