AUNT SELMA'S SWEDISH MEATBALLS image

Number Of Ingredients 14

1 pound ground beef (80% lean) or ground pork (or a mixture of both)
1 teaspoon salt
1/2 teaspoon dried sage or poultry seasoning
1/4 teaspoon black pepper
1 egg
choose one Swedish spice variation:
1/4 teaspoon nutmeg OR
1/4 teaspoon allspice OR
1/4 teaspoon ground cloves
choose one binding agent:
1/4 cup flour OR
1/2 cup cooked rice OR
1/2 cup oatmeal OR
1 slice of white bread, dampened with milk and mashed

Steps:

  • Preheat oven to 350 Combine all ingredients in a bowl, knead by hand until thoroughly mixed. Using wet hands, form meat into balls about the size of a quarter in diameter. Line a roaster pan with foil to catch drippings, place meat rack in the pan. Place meatballs on the rack. Bake at 350 for 30 minutes until meatballs are well cooked and no pink is left in the center. Serve with egg noodles or new potatoes, cucumber salad, beets, and peas.
