Aunt Evelyn's Baked Potato and Cheese Casserole image

Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by my Aunt Evelyn.

potatoes
butter
salt
pepper
1 medium onion, chopped
velveeta mexican cheese (mild)

Steps:

  • 1. Peel and slice the number of potatoes needed to fill your chosen baking dish. Mix the potatoes and onions together in the baking dish. Salt and pepper the sliced potatoes.
  • 2. Dot the top of the potatoes with butter.
  • 3. Cover dish and cook for 1 hour at 350°F. Take out of the oven, cover potatoes with shredded cheese. Put dish bake in oven, uncovered, until cheese melts.
