And she always told the family joke about her Aunt Clara who, when asked to bring cheese potatoes to a family gathering, came in lugging a 5-lb. bag of potatoes and a block of cheddar...

Steps:
- 1. Peel potatoes and slice into 1/8" slices. Place in greased Dutch oven.
- 2. In a large saucepan, melt butter. Add flour and stir until blended. Add the salt and pepper. Pour in milk, little by little, stirring constantly with a wire whisk.
- 3. Over medium-high heat, whisk constantly until mixture begins to thicken. When bubbles start to form, remove from heat and add 1-1/2 cups of the cheese. Pour over potatoes and mix thoroughly.
- 4. Bake in a pre-heated 350-degree oven, covered, for 1 hour. Remove lid, sprinkle 1/2 cup remaining cheese over the top of potatoes, and continue baking, uncovered, for 30 minutes more.
- 5. If you like, you may add buttered bread crumbs (about 3/4 cup) when you add the 1/2 cup of cheese.
