ASPARAGUS CREPES image

Number Of Ingredients 16

Crepes:
6 eggs
1/2 tsp salt
3c flour
3 cups milk
3/4 c melted butter
filling:
4 stems asparagus per crepe - 2 bunches.
sauce:
9 tbs butter
9 tbs flour
1.5 cups 1/2 and half
1.5 cups milk
1.5 tsp salt
about 1 cup + gruyere grated
about 1/2 cup fresh grated parm

Steps:

  • crepes: wisk eggs and salt. add flour and milk alternating in 3 batches with hand mixer. Mix in butter. chill 1 hr. Filling: melt butter. whisk in flour, cook 1 -2 min. Stir in milk and light cream. Add salt. Stir over medium until thick. Add cheese and stir to melt. 4 spears blanched per crepe, dab sauce and roll. Fill pan, then pour sauce over the top. Bake 350, 15-20 min.
