Steps:
- crepes: wisk eggs and salt. add flour and milk alternating in 3 batches with hand mixer. Mix in butter. chill 1 hr. Filling: melt butter. whisk in flour, cook 1 -2 min. Stir in milk and light cream. Add salt. Stir over medium until thick. Add cheese and stir to melt. 4 spears blanched per crepe, dab sauce and roll. Fill pan, then pour sauce over the top. Bake 350, 15-20 min.
