I'm not a big fan of arugula, but I loved this salad. The peaches and almonds really mellowed out the peppery flavor.

I didn't have any sorghum, so I substituted quinoa. It worked well and added a protein boost to the salad.

The dressing was a bit too tart for my taste, but overall the salad was still enjoyable.

I was skeptical about the sorghum, but it added a nice nutty flavor and chewy texture. Loved the contrast with the soft peaches and crunchy almonds.

This salad was a delightful burst of flavors and textures. The sweetness of the peaches and the crunchiness of the almonds and sorghum perfectly complemented the peppery arugula. The lemon-honey vinaigrette tied everything together beautifully.
