Steps:
- Deixe o feijão de molho a noite. Corte a galinha, tire a pele (reserve), desosse o peito e parta em 4 pedaços. Tempere com suco de um limão galego e um limão verde, sal marinho, pimenta do reino e dois dentes de alho. Marine por no mínimo 2h. Cozinhe o feijão com uma folha de louro e um bouquet garni. Refogue alho e cebola, misture ao feijão e cozinhe por mais 5 min. Escorra toda água do feijão e amasse como um purê. Corrigir o sal e acrescentar pimenta do reino. Em uma panela de ferro quente (fogo médio), coloque as peles da galinha para fritar (sem gordura). Quando estiverem crocantes, tire-as da panela e escorra em papel para gordura. Reserve. Aumente o fogo (alto) e coloque os pedaços da galinha marinada na panela com a gordura que ficou da pele. Deixe ganhar cor em cada pedaço. Diminua o fogo (médio) e deixe-a fritando por cerca de 30 min., sempre virando os lados cuidadosamente para não queimá-las. Em uma caçarola pequena, coloque 3 xícaras de água filtrada. Ferva e acrescente um saquinho de açafrão ou uma porção de estigma e o capim limão. Ferva em fogo baixo por 5 min. Quando a galinha estiver frita, moreninha, e desfiando retire-a cuidadosamente da panela, reserve e faça o refogado para o arroz com alho e cebola picadinhos. Refogue o arroz, acrescente o tomate, a pimenta dedo de moça, a noz moscada ralada na hora, os louros e as duas pitadas de cominho inteiro ou em pó. Fogo médio: acrescente cuidadosamente a galinha e por cima jogue o caldo de açafrão e capim limão. Deixe cozinhar sem mexer por cerca de 10 min. ou ate que o arroz fique al dente, porém sem deixar que o caldo seque totalmente. O arroz deve ficar molhadinho, porém al dente. Montar o prato com o arroz, fatias ou pedaços de frango por cima. O feijão pode se colocado em volta do prato ou em um potinho ou panelinha para acompanhar. Finalize cortando o torresminho da galinha em pequenos pedaços e jogando por cima do purê de feijão. Finalize com cebolinha verde picada em diagonal.
