APRICOT SQUARES image

Number Of Ingredients 11

Base: ½ C. butter
1/4C. sugar
1 C. flour
Topping: 2/3 C. dried Californian apricots
2 eggs
1 C. brown sugar
½ tsp. brandy extract
1/3 C. flour
Dash of salt
½ tsp. baking powder
½ C. chopped walnuts

Steps:

  • 1. Preheat oven to 350 2. Stir base ingredients together (butter, sugar and flour) 3. Press into in 8x8 inch pan and bake at 350 for 15-20 min or until lightly browned. 4. Chop apricots and put in a microwave-safe bowl with 3 T of water. Microwave on medium heat for 2 min. 5. Beat brown sugar and eggs together. 6. Stir in brandy extract. 7. Add flour, salt and baking powder. 8. Stir in apricots and walnuts 9. Spread over baked crust and bake for 30 min at 350.
