Steps:
- Heat oven to 350. Line an 8" square pan with parchment: crisscross two sheets and leave edges overhanging (some butter pan and sheets, I don't find it necessary)
- Toast oats, almonds, pepitas on rimmed baking sheet until brown: ~10 minutes.
- Chop or process apricots until finely chopped
- Combine toasted ingredients, salt and apricots
- Combine Almond butter and maple syrup and cook until bubbling over medium heat: ~2-3 min.
- Pour over dry ingredients and stir until combined.
- Spread in pan and chill at least 3 hours and up to 3 days. Cut into 12 2x4 pieces.
- Will keep 5-7 days if individually wrapped; longer in refrigerator.

[email protected]These granola bars are really delicious, but they're a bit too crumbly for my taste. I think I'll try adding a little more butter next time.

[email protected]I'm not a big fan of apricots, but I really enjoyed these granola bars. The sweetness of the apricots was perfectly balanced by the tartness of the cranberries.
