APRICOT GRANOLA BARS image

Number Of Ingredients 8

1/2 cup oats, old fashioned not quick
1/2 cup raw almonds, roughly chopped
1 cup raw pepitas
1 cup dried apricots
1/4 teaspoon salt
1/4 cup almond butter
1/4 cup maple syrup
1/4-1/2 cup optional: golden raisins, dried cherries, dried cranberries, anything!

Steps:

  • Heat oven to 350. Line an 8" square pan with parchment: crisscross two sheets and leave edges overhanging (some butter pan and sheets, I don't find it necessary)
  • Toast oats, almonds, pepitas on rimmed baking sheet until brown: ~10 minutes.
  • Chop or process apricots until finely chopped
  • Combine toasted ingredients, salt and apricots
  • Combine Almond butter and maple syrup and cook until bubbling over medium heat: ~2-3 min.
  • Pour over dry ingredients and stir until combined.
  • Spread in pan and chill at least 3 hours and up to 3 days. Cut into 12 2x4 pieces.
  • Will keep 5-7 days if individually wrapped; longer in refrigerator.
