Apricot Amaretto Chews image

Chunky and chewy cookies...a delicious mouthful! Almond extract may be used in place of amaretto. In dough use 1/2 tsp almond extract and 2 tsp of water in place of the amaretto. In icing use 1/4 tsp almond extract and enough water to get the correct consistency in place of the amaretto.

I'm allergic to apricots, but I was able to make these chews with dried peaches instead. They turned out great!

These chews are really good, but they're a bit too chewy for my taste. I think I'll try making them with less gelatin next time.

I'm not sure what I did wrong, but my chews turned out really dry. I think I might have overcooked them.

I'm not a big fan of amaretto, but I still really enjoyed these chews. The apricot flavor is really prominent, and the amaretto just adds a subtle hint of flavor.
