APPLESAUCE CAKE WITH GINGER, RAISINS & WALNUTS image

1-1/2 cups all purpose flour
1 tsp baking soda
2 tsp cinnamon
1 tsp nutmeg
1/4 tsp ground cloves
1/2 tsp ginger
1/4 tsp salt
1-3/4 cup turbinado sugar
1/4 cup Grade B maple syrup
1 stick unsalted butter
3 tsp dark rum
1 large egg
1-1/4 cups unsweetened applesauce
1/4 cup chopped crystallized ginger
1/3 cup golden raisins
1/3 cup coarsley chopped walnuts, pecans, or blanched siced almonds
Confectioners sugar for dusting finished cake

Steps:

  • Lightly butter a 9" springform pan and preheat oven to 350 on convect. Whisk together flour, baking soda, spices and salt in a medium bowl. In large bowl of a stand mixer, beat sugar, butter and maple syrup until well combined. Add egg and beat on medium high until pale and fluffy. Reduce speed to low and add dry ingredients, mixing until well combined. Add applesauce and rum and mix until combined well. Fold in crystallized ginger, raisins and nuts, and spread batter evenly in springform pan. Bake about 35-40 minutes, until toothpick inserted in center comes out clean. Cool 10 minutes on a rack, then removes side of pan and cool completely. Dust lightly with confectioners sugar when completely cool.
