Applesauce Banana Muffins image

These muffins are good for breakfast with a cup coffee or any time. They are good served plain or you can add a glaze.

2 cups flour
1 1/2 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons cinnamon
1 teaspoon ginger
1/4 teaspoon allspice
2 eggs
1 cup sugar
1 cup brown sugar
2 bananas mashed
1 cup applesauce
2/3 cup oil
1 teaspoon vanilla
chopped pecans/walnuts optional
GLAZE
1 cup powdered sugar
1 teaspoon vanilla
1-2 tablespoons milk

Steps:

  • 1. Heat oven to 350 degrees Spray muffin tins with non-stick spray or use liners. Sift together all dry ingredients in large bowl.
  • 2. In another large bowl, beat eggs with both sugars until light. Mix applesauce, banana, oil and vanilla until smooth. If you wish to add chopped nuts, you may do so now. Fold in dry ingredients. Do not over mix. Pour into prepared muffin tins.
  • 3. Bake 18-20 minutes or until toothpick test in center of muffin comes out clean. Cool 10 mins and remove to wire racks to finish cooling.
  • 4. Glaze, mix the ingredients with the milk being added 1 tablespoon at a time. You may want to add a little more milk until you reach the desired consistency. I glazed 1/2 of the muffins and then melted 20 chocolate chips in microwave and added it to the glaze to make a chocolate flavored glaze for the remaining muffins. Enjoy!
