APPLE RAISIN CRISP image

FOR THE TOPPING:
1/2 cup organic oats
3 tablespoons organic brown
sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon organic butter
or margarine spread
1 tablespoon local honey or
agave nectar
2 tablespoons canola oil
2 tablespoons organic whole
wheat flour
FOR THE FILLING:
2 pounds firm, ripe apples
cut into 1/4 inch slices
1 cup organic raisins
1 tablespoon lemon juice
1 tablespoon organic brown
sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon organic whole
wheat flour
1/2 cup walnuts (or any nut of
your choice)
olive oil or cooking spray

Steps:

  • Preheat oven to 350 F. Coat an 8 or 9 inch baking dish with olive oil or cooking spray. Melt the organic butter or margarine spread and set aside. In a medium mixing bowl, combine the ingredients for the topping; mix with a fork until crumbly and set aside. For the filling add the apples, raisins, walnuts, and lemon juice in a large mixing bowl. Then add cinnamon, nutmeg, brown sugar, whole wheat flour and stir gently to combine. Transfer the apple raisin mixture to the coated baking dish, then cover with the topping. ***Optional For an extra crunch, sprinkle a handful of oats 1/8 teaspoon of cinnamon, and drizzle a little bit of honey over the top of the crumb mixture.*** Bake for 30-35 minutes or until the filling is bubbling and the topping is golden brown. Cool at least 15-20 minutes before serving.
