Yield 6 servings

Number Of Ingredients 10

6 eggs
1-1/2 cups milk
1 cup all purpose flour
3 tbsp granulated sugar
1 tsp vanilla extract
1/2 tsp salt
1/4 tsp cinnamon
1/4 lb butter or margarine
2 apples, peeled and thinly sliced
2-3 tbsp brown sugar

Steps:

  • Preheat oven to 425 degrees. In a blender or large bowl, mix eggs, milk, flour, granulated sugar, vanilla, salt and cinnamon until blended. If using a mixer, batter will remain slightly lumpy. Melt butter or margarine in a 12-inch fluted porcelain quiche dish or a 13" x 9" baking dish in oven. Add apple slices to baking dish. Return to oven until butter or margarine sizzles. Do not legt brown. Remove dish from oven and immediately pour batter over apples. Sprinkle with brown sugar. Bake in middle of oven 20 minutes or until puffed and brown. Serve immediately.

I followed the recipe exactly, but my pancake didn't turn out as pictured. It was still tasty, but it wasn't as fluffy as I expected.

This apple puffed pancake was a delightful treat! The pancake was light and fluffy, with a crispy exterior and a tender, moist interior. The apples added a touch of sweetness and tartness that perfectly complemented the pancake.
