Apple Pineapple Cheese Salad image

Apples and sharp cheese go so well together! It really is worth the time to toast the almonds, but still good even if you don't have time to toast them.

Time 15m

Yield 8 serving(s)

Number Of Ingredients 11

3 medium tart apples, unpeeled and diced
2 tablespoons lemon juice
1/4 cup chopped red onion

1 (20 ounce) can pineapple chunks, well drained
8 ounces sharp cheddar cheese, cut into small cubes
3/4 cup slivered almonds, toasted
1/2 cup reduced-fat sour cream
1/4-1/2 cup mayonnaise mayonnaise
salt and pepper, to taste
lettuce leaf

I'm not a big fan of mayonnaise, so I used Greek yogurt instead. It was still very good.

The salad was a bit too sweet for my taste, but I think that's because I used canned pineapple. I'll try it again with fresh pineapple next time.
