Apple Pie Muffins image

I'm not really a muffin person...but when asked to make them, I do make some good ones and this would be one of them!!! Every bite you take is wonderful...full of apple,walnuts and a little crunchy topping. Enjoy and Happy Baking!!! I adapted this from my apple pie bread, also posted here on Just A Pinch.

2 c apples, chopped (about 2 c)
2 c all purpose flour
2 tsp baking powder
2 tsp apple pie spice (recipe to follow)
1/2 tsp sea salt
1/2 c butter, softened
1/2 c brown sugar
1/2 c sugar
1/3 c sour cream
1 tsp vanilla
2 eggs
3/4 c walnut pieces
TOPPING
1/4 c all purpose flour
1/4 c brown sugar
1/2 tsp apple pie spice
2 Tbsp butter, softened
GLAZE
1 c powdered sugar
3-4 Tbsp cream
1/2 tsp vanilla
APPLE PIE SPICE
1/4 c cinnamon
1 Tbsp all spice
2 tsp ginger
2 tsp nutmeg
1/2 tsp cardamom, if available, not necessary

Steps:

  • 1. -Preheat oven to 350. -Line cupcake/muffin pan with 12 liners, set aside. -Peel and core apples, dice and soak in salt water (2 c cold water 1/4 tsp sea salt) or 2-3 tbsp lemon juice for 3-5 minutes, then rinse and drain, leave diced apples in strainer for excess water to drain off. Mix together apple pie spice ingredients, if you don't have any. This will make extra, just store in air tight container or zip lock bag for future use.
  • 2. Sift together flour, baking powder, apple pie spice and sea salt, set aside. In a large mixing bowl, cream together butter, brown sugar and sugar. Mix in sour cream and vanilla. Add eggs and beat until well combined. Slowly mix in flour mixture until just combined. Fold in apples and nuts. Scoop batter (it will be thick) evenly into prepared pan, set aside.
  • 3. TOPPING: In a small bowl, whisk together brown sugar, flour, apple pie spice. Cut in butter until crumbly. Sprinkle over batter. Bake at 350 for 25 minutes or until toothpick inserted comes out clean. Set pan on cooling rack for 10 minutes, then remove muffins to rack to cool completely.
  • 4. GLAZE: Whisk together powdered sugar, cream and vanilla, add more cream a little at a time until of drizzling consistency. Drizzle over muffins as shown in photo. (You could use milk instead of the cream, but you will need much less.)
