Apple Oatmeal Casserole image

This is so easy to put together. Great for a Sunday morning family breakfast. But since we're empty-nesters, I bake it on Sunday and we eat it all week for breakfast. Just scoop out a serving and heat it in the microwave with a little extra milk!

Time 55m

Number Of Ingredients 9

2-3 medium apples, chopped (2 cups)
1/2 c raisins
2 Tbsp butter
1 tsp cinnamon
1/4 tsp nutmeg (optional)
1/3 c packed brown sugar
2 2/3 c old-fashioned oats
4 c mlk
1/4 tsp salt

Steps:

  • 1. In a large skillet, melt the butter over medium-high heat. Add apples, raisins, sugar, cinnamon and salt; saute until apples are slightly soft. In 2-quart casserole, combine oats and milk. Stir in apple mixture. Bake uncovered at 350 degrees for 30-40 minutes, until most of the milk is absorbed. If using a flat casserole, it only takes about 30 minutes. If using a round casserole, bake about 40 minutes.
  • 2. Serve with additional milk if desired. Also good with some chopped walnuts sprinkled on top.

I was disappointed with this recipe. The casserole was bland and dry. I think it needed more spices and moisture. I won't be making this again.

This casserole was a little too mushy for my taste. I think I would have preferred it with less oatmeal. But the flavor was good.

This casserole was a bit too sweet for my taste, but it was still good. I think I'll try it again with less sugar next time.
