Steps:
- 1. In a medium bowl, combine 1-3/4 cups of the flour, 1/4 cup of the sugar, baking powder, baking soda and salt. In a small bowl, combine egg, milk, applesauce and butter; mix well.
- 2. Add egg mixture to flour mixture; stir until just moistened. Batter will be lumpy; do not overmix.
- 3. In small bowl, toss cranberries with remaining 2 tbsp. sugar; fold into batter.
- 4. Spoon batter evenly into 12 greased 2-3/4 inch muffin cups.
- 5. In measuring cup, combine remaining 1/4 cup of sugar and the cinnamon. Sprinkle over tops of muffins.
- 6. Bake at 400 degrees for 20 to 25 minutes until golden brown. Cool on wire rack.
