Steps:
- Combine egg, oil, salt, sugar, milk and apples in one bowl. In a larger bowl combine flour and baking powder. Add wet ingredients to dry ingredients, and stir in cheddar cheese. Fill muffin cups and top with remaining cheese. Bake for 25 minutes in a 400F oven.
