Apple, banana,oatmeal nut bread image

Just trying something different. Hope it turns out well. After making this, I believe it would be better to just make one loaf as two were not very big. I changed the directions to accommodate this. If you think you have too much batter for one loaf, make a couple of muffins with the excess.

preheat oven to 375 degrees f.
2 ripe bananas mashed
1 large. fully ripe red delicous apple (or two medium) diced or chopped
1 c sugar
2 eggs beaten
1/2 c margarine softened
2 c self rising flour
1 c uncooked rolled oats ( i used quaker old fashion)
1 tsp ground nutmeg powder
1/2 Tbsp ground cinnamon powder
1/2 c chopped pecans

Steps:

  • 1. Place mashed bananas and chopped/diced apples in a large mixing bowl.
  • 2. add sugar, eggs, margarine and stir mixture until well combined.
  • 3. add flour, rolled oats, pecans and spices and mix well.
  • 4. pour mixture into a greased loaf pan or glass baking dish. Use a metal loaf pan or a glass loaf dish 4 1/2" by 8 1/2" by 3" deep.
  • 5. Bake at 375 degrees F. for 50 minutes or until done.
