Apple and Mint Couscous image

Recently, I began eating couscous and I like to try different recipes. I saw this one in the magazine of Ricardo. ETA : I made it on September 5, 2011. I omitted the peas. I used a Paula Red apple. It's so yummy. Great blend of flavors.

This dish was a bit bland for my taste. I think I'll add some more spices next time.

This recipe is a bit too sweet for my taste, but I think that's because I used a sweeter variety of apples. Next time, I'll try using a more tart apple to balance out the flavors.

This recipe is a great way to use up leftover apples. I also like to add some chopped walnuts or almonds for a bit of extra crunch.
