olive oil, for frying
1 banana shallot, finely chopped
3 ounces tinned anchovies, diced
1/4 cup balsamic vinegar
chopped chives
2/3 cup extra virgin olive oil

Steps:

  • Heat a little olive oil in a small frying pan and cook the shallot until softened. Add the anchovies and cook for 1-2 minutes.
  • Remove from the heat and transfer to a bowl. Add the balsamic vinegar and chopped chives. Pour in the extra virgin olive oil and mix together well.
