Ammonia Cookies image

Jenan Madden, the manager of a book store in Seattle, shared this recipe with The Times. She acquired it as a child from a favorite baby sitter. "The taste is great," she said. "And it's fun telling people what they are called." (Ammonia cookies are in fact made with ammonium carbonate, a form of baking soda, not cleaning ammonia, which is poisonous.)

I'm allergic to almonds, so I substituted almond flour with oat flour. The cookies turned out great!

I'm not a huge fan of the flavor of these cookies. I think the ammonia is a bit too overpowering.

These cookies are a bit more delicate than some other types of cookies, so you need to be careful not to overmix the dough.

I've never used ammonia in a cookie recipe before, but I was pleasantly surprised by how well it worked. The cookies were light and fluffy, with a slightly crispy exterior.
