Amish Pea Salad image

Another picnic salad from a different Amish cookbook. About the preparation time, it takes about 20 to 30 minutes to do all the chopping, etc., then there's the chilling time, to allow the flavors to blend.

Number Of Ingredients 14

1 14 oz. can(s) of good quality peas
1 c cubed, mild longhorn or cheddar cheese
1 c salted peanuts
1/3 c chopped celery
1/4 c chopped onion
1/4 c chopped sweet pickle pieces (not relish)
1/4 c chopped fresh parsley
2 Tbsp chopped green bell pepper
1 Tbsp chopped red bell pepper, or canned red pimento
1 hard-cooked egg, coarsly chopped
4 Tbsp (heaping) creamy salad dressing (such as miracle whip)
1 tsp lemon juice
1 tsp prepared mustard
1 tsp celery seed

Steps:

  • 1. Combine all the ingredients in the order given in a large bowl and mix lightly.
  • 2. Chill for several hours (about 3 is good) in a tightly covered container to allow all of the flavors to meld (see my notes).
