This is from an old Amish cookbook made in Northern Indiana. Here are two recipes for grape nuts. One is regular with a large volume, the other is brown sugar grape nuts. Below the recipe is a cooks note from The owner of the recipe saying, "This is always our winter cerial".

Steps:
- 1. Grape nuts 1 1/2 cup oleo 2 1/2 qts sour milk 1 1/4 tbsp salt 4 tsp baking soda 2 tbsp vanilla 1 1/2 tsp maple flavoring 5 lbs brown sugar 8 lbs wheat flour Put in pans and bake at 350 degrees until done. Put through a screen when cooled and toast in a slow oven. Makes about 15 pounds
- 2. Brown Sugar Grape Nuts 4 cups brown sugar 2 qts sour milk 4 tsp salt 4 tsp baking powder 14 cups whole wheat flour 1/2 lb butter 4 tsp vanilla flavoring 2 tsp maple flavoring Bake at 350 degrees until done. Crumble and dry in low oven turning every 15 minutes
