Americana Key Lime Pie image

Number Of Ingredients 15

1 Tbsp unflavored gelatin (1 envelope)
1/2 c sugar
1/4 tsp salt
4 egg yolks
1/2 c lime juice
1/4 c water
1 tsp grated lime peel
few drops green food color
4 egg whites
1/2 c sugar
1 c heavy cream, whipped
1 9 inch pastry shell
1/4 c pistachio nuts, chopped
lime slices for garnish
heavy cream, whipped, to top

Steps:

  • 1. Thoroughly mix gelatin, 1/2 cup sugar and salt in saucepan.
  • 2. Beat together egg yolks, lime juice and water; stir into gelatin mixture.
  • 3. Cook and stir over medium heat just until mixture comes to boiling.
  • 4. Remove from heat; stir in grated peel.
  • 5. Add food coloring sparingly to tint pale green.
  • 6. Chill, stirring occasionally, until the mixture mounds slightly when dropped from a spoon.
  • 7. Beat egg whites until soft peaks form; gradually add 1/2 cup sugar, beating to stiff peaks.
  • 8. Fold gelatin mixture into egg whites.
  • 9. Fold in whipped cream.
  • 10. Pile into cooled baked pastry shell.
  • 11. Chill until firm.
  • 12. Spread with more whipped cream; edge with grated lime peel.
  • 13. Sprinkle chopped pistachio nuts in center.
  • 14. Garnish with thinly sliced lime placed in whipped cream mounds around edge of pie.
