Amazing Calavacita and Pork image

This Mexican recipe was handed down to my husband by his mother. A blend of zucchini, onion, and pork that is simmered together, and then served with warm tortillas. A simple but delicious recipe.

I'm not sure what went wrong, but my dish didn't turn out as good as I expected. The pork was dry and the calavacita was mushy.

I made this dish exactly as the recipe said and it turned out great! The only thing I would change is to add a little bit more salt. Other than that, it was perfect.
