Aloha Quick Bread image

A delicious oldie from Quick Cooking.

1/2 c butter, softened
1 c sugar
2 eggs
1 c mashed bananas ( 2 medium)
1/4 c milk
1 Tbsp grated orange peel
1 tsp vanilla
1/2 tsp almond extract
2 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 c coconut
1/2 c chopped nuts
1/2 c crushed pineapple

Steps:

  • 1. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in banana, milk, orange peel and extracts.
  • 2. Combine flour, baking soda and salt; add to the creamed mixture just until moistened. Fold in coconut, nuts and pineapple. Transfer to a greased 9x5 inch loaf pan.
  • 3. Bake at 350 for 1 hour and 20 minutes or until tested clean near the center. Cool for 10 minutes before removing from pan to a rack.
  • 4. Makes 1 loaf.
