My wife makes this since on my renal diet, I can't have potatoes. You must like cauliflower to enjoy this. Low everything. Ok for renal diet and diabetic diet.

Steps:
- 1. Cut cauliflower into pieces and rinse with water.
- 2. Put cauliflower pieces in a microwave safe dish, cover and cook on high for 8 to 10 minutes or until soft.
- 3. Drain off moisture from cooked cauliflower.
- 4. Place hot cauliflower in a blender and blend untl smooth.
- 5. Add cream cheese, garlic, and pepper. Blend to combine ingredients.
- 6. Remove from blender and serve hot.
