Aioli-style Potatoes image

Found this on the web site as I was really inspired by Anthony Nicometi's recipe of Neon Lemon Aioli. I wanted to find out about this Aioli sauce and came happily upon this recipe and my mouth started to water and my eyes popped out and so I had to add it to my list of making yesterday, and so I thought I would share it to as...

Number Of Ingredients 10

2 lb tiny new red potatoes
1/4 c olive oil
1/4 c butter, melted
1/3 c mayonnaise
2 Tbsp fresh garlic, minced
2 Tbsp chopped fresh parsley
1 tsp chopped fresh basil
salt and pepper, to taste
shredded parmesan cheese, for garnish
parsley, for garnish

Steps:

  • 1. Halve potatoes and set aside. In a large bowl, combine the next seven ingredients (olive oil to salt and pepper). Whisk to combine well. Add potatoes and toss.
  • 2. Place potatoes in a roasting pan, uncovered, and roast at 350ยบ for 35-40 minutes, stirring often, or until potatoes are tender.
  • 3. Garnish potatoes with Parmesan and parsley.
