3 CHEESE FRITTATA image

Number Of Ingredients 2

10 eggs - 1/4 tsp pepper - 1/4 cup parm/reggiano cheese - 3 oz asiago cheese cut into1/2" dice - 3 oz provolone cheese cut into 1/2" dice - 1 tsp olive oil - 1 cup thinly sliced gr onions
white & light gr portions - 3 garlic cloves minced - 1 tsp chopped thyme

Steps:

  • lightly whisk eggs - whisk in black pepper & cheeses - set aside - in deep 1/2 of frittata pan over med heat 1 tsp oil - add gr onions - cook 2 mins - stir in garlic & thyme - cook 30 sec - add egg mix - cook - use rubber spatula to lift cooked edges & allow uncooked eggs to flow underneath, about 2 mins - continue to cook until eggs begin to set about 4 mins - set shallow 1/2 of frittata pan over med/lo heat - brush lightly c oil - place shallow pan upside down on top of deep pan - flip frittata into shallow pan - cook, covered until eggs are set about 6 mins - shake pan to loosen frittata - slide onto serving plate
