Time 20m

Yield 4 serving(s)

Number Of Ingredients 9

1 1/2 lbs halibut steaks, cut into 8 pieces
1/4 cup chicken stock or 1/4 cup vegetable stock
2 tablespoons lemon juice
3 medium garlic cloves, pressed
2 tablespoons capers
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh chives
salt and pepper

Steps:

  • Preheat oven to 450.
  • Place the fish in a baking dish just large enough to hold them.
  • Mix remaining ingredients well in a bowl and pour over fish.
  • Cover, and bake until done, about 15 minutes; don't overcook.
  • Check for doneness by inserting the tip of a knife into the center of the fish. Halibut should flake easily when done, yet still be moist.
  • Remove from heat just before it is done to your liking, as it will continue to cook.
  • Serve at once, pouring the pan juices over the fish.

This recipe is a bit bland for my taste. I would add some more herbs or spices next time.

I'm not a fan of herbs, so I omitted them from the recipe. The halibut was still delicious, but I think it would have been even better with the herbs.

I followed the recipe exactly, but my halibut didn't come out as flaky as I would have liked. Maybe I overcooked it?
