MARY'S PEANUT BUTTER COOKIES RECIPE

Mary's Peanut Butter Cookies Recipe image

This is a great soft peanut butter cookie! My husband's comment was that the peanut butter taste was not so overwhelming as most cookies of this type... very nice.

Provided by M L

Categories     Cookies

Number Of Ingredients 9

1/2 c margarine, light
1/2 c peanut butter, creamy
1/2 c sugar (plus additional for rolling cookies in before baking)
1/2 c brown sugar
1 egg
1/2 tsp vanilla extract, pure
1 1/4 c flour
3/4 tsp baking soda
1/4 tsp salt

Steps:

  • 1. Preheat oven to 375 degrees F.
  • 2. Combine margarine, peanut butter, sugars, egg and vanilla.
  • 3. In a separate bowl sift together dry ingredients and add to wet mixture.
  • 4. Form into small balls, roll in remaining sugar and flatten with a fork... creating a criss-cross design.
  • 5. Bake 10-12 minutes until practically perfect.
  • 6. Note: You can substitute butter for the margarine, but I actually prefer the reduced-fat margarine in this recipe. Also, be careful not to over-bake. These cookies are best when they're a little under-done.

THE LAST PEANUT BUTTER COOKIES RECIPE YOU'LL EVER TRY

The Last Peanut Butter Cookies Recipe You'll Ever Try image

These are the most amazing cookies. They are crispy on the outside, soft on the inside and freeze so well. You can't even tell they were frozen! The best part - they are drop cookies, no shaping necessary. If you love nuts, use crunchy peanut butter and add the nuts, if not, use creamy PB and 2 cups of peanut butter chips. Cook time is for one batch. Dough keeps well in fridge so you can bake a batch every day and have fresh cookies!

Provided by momofallboys

Categories     Drop Cookies

Time 25m

Yield 80-100 cookies

Number Of Ingredients 11

1 1/2 cups butter or 1 1/2 cups margarine
1 1/2 cups creamy peanut butter or 1 1/2 cups crunchy peanut butter, your choice
1 1/2 cups sugar
1 1/2 cups brown sugar
3 eggs
3/4 teaspoon salt
1 1/2 teaspoons baking powder
2 1/4 teaspoons baking soda
3 3/4 cups flour
12 ounces peanut butter chips
1 cup nuts (optional)

Steps:

  • Cream peanut butter and margarine, add sugars and mix well.
  • Add eggs and mix until creamy.
  • Add remaining ingredients.
  • Chill for one hour-I usually skip this step and chill between batches.
  • Drop by teaspoonful onto cookie sheets- do not flatten.
  • Bake at 325°F for 15 minutes.
  • Cool on cookie sheets for about 5 minutes then transfer onto newspaper- the newspaper soaks up extra grease so the cookies don't become crumbly, little trick I learned from my MIL- this is also optional.
  • Edited to add - Immediately after the cookies are completely cooled I always transfer them to an airtight container. Several posters have mentioned the cookies get hard if you leave them out. I have never had that problem - these cookies have always stayed soft and moist if they are stored in an airtight container.

PEANUT BUTTER CHEWIES (NO BAKE COOKIES) RECIPE - (4.8/5)

Peanut Butter Chewies (No Bake Cookies) Recipe - (4.8/5) image

Provided by Foodiewife

Number Of Ingredients 5

1 cup sugar
1 cup Karo light corn syrup
1 cup peanut butter, creamy or chunky
6 cups cornflakes or other crispy corn cereal
Good quality milk or dark chocolate, for dipping or drizzling (optional)

Steps:

  • Place the cornflakes into a large bowl; set aside. Combine sugar, corn syrup and peanut butter in a large saucepan. Heat until mixture comes to a boil around the edges of the pan, stirring constantly. Remove from heat and pour over cornflakes. Stir gently, until thoroughly coated. Drop cookies, using about 2 tablespoons for each, onto waxed paper. You can use a 2-inch cookie scoop. Let cool. Store in airtight container. Once the cookies have cooled and set, you can either dip the bottom of each cookie in melted chocolate (my favorite way) or you can drizzle it over each cookie.

PEANUT BUTTER & CHOCOLATE CHIP CREAM CHEESE COOKIES RECIPE - (4.4/5)

Peanut Butter & Chocolate Chip Cream Cheese Cookies Recipe - (4.4/5) image

Provided by á-5050

Number Of Ingredients 5

1 can seamless crescent rolls (or pinch together seams on a regular can)
8 ounce cream cheese, room temperature
1/3 cup sugar
2 teaspoon vanilla
3/4 cup mixed peanut butter chips and chocolate chips

Steps:

  • Beat sugar, cream cheese and vanilla together until smooth and creamy. Unroll the crescent roll sheet onto lightly floured surface. Stretch the dough out, I use a rolling pin to do this, then trim the edges to give it a good rectangular shape. A pizza cutter is great for trimming edges of dough. Spread the cream cheese mixture over the top of the crescent sheet, leaving a gap at the edge about 1/2 inch. Sprinkle your chips on top of cream cheese. Press them in lightly to aid in rolling. Roll the crescent sheet up tightly and wrap in cling wrap. Place in freezer for at least 2 hours it won't get really solid as the cream cheese mix won't freeze hard. When chilled. preheat oven to 350°F. Line a cookie sheet with parchment paper (prevents sticking and helps in cleanup). Slice the crescent roll into 1/4" slices. They won't keep the precise round shape, but that is fine! Bake on prepared cookie sheet for 12 to 14 minutes until crescent roll appears golden brown. Cool on the parchment paper or wire rack. Enjoy! They are soft and oh so yummy!! HINT: From an old school baker, try this for perfect sliced cookies. Cut a piece of sewing thread, slide it under the dough and cut by pulling the thread together. You can flour the thread a little. This method cuts perfect cookies over and over.

Bake for another two to five minutes depending on how dark you want your cookies. This recipe makes about six-dozen (72) Peanut Butter Chocolate STARS Cookies

Tips:

  • Use both light and dark brown sugar: This combination of sugars gives the cookies a richer flavor and chewier texture.
  • Cream the butter and sugars together until light and fluffy: This will help the cookies spread properly in the oven.
  • Don't overmix the dough: Overmixing can make the cookies tough.
  • Chill the dough before baking: This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until the edges are golden brown and the centers are set: Overbaking will make the cookies dry and crumbly.
