Oh, how we loved the buttery taste of this Irish shortbread. It's different than most shortbread we've made. The shortbread is very delicate, crumbly, and full of butter flavor. But, it's not overly sweet. Perfect for someone that doesn't like a sweet dessert. If you do like things a little sweeter, though, it wouldn't hurt to...

This is the most amazing shortbread ever. Flaky and rich, and very very simple; I've never had a shortbread that compares to it. Note: I use salted butter. If you use unsalted, you may want to add a pinch of salt.

Number Of Ingredients 4

3 c flour
1 1/2 c cornstarch
1 1/2 c confectioners' sugar
2 1/2 c butter (5 sticks), room temperature

Steps:

  • 1. Mix all ingredients together to form a soft ball. 2. Roll into small balls and press with down with a fork. Place on an un-greased cookie sheet. Or the dough may be pressed into a 9" round or 9" square, lightly oiled, pan and then after baking sliced into bars or triangles. 3. Bake in preheated 325 degree oven for about 12 min. Shortbread should not brown, but just begin to slightly loose the whiteness.

Tips:

  • Use chilled, unsalted butter for the best results. Cold butter creates a more flaky texture in the cookies.
  • Cream the butter and sugar together until light and fluffy. This will help to incorporate air into the dough, making the cookies lighter and more tender.
  • Add the flour in 3 additions, mixing until just combined. Overmixing the dough will make the cookies tough.
  • Chill the dough for at least 30 minutes before rolling and baking. This will help the cookies to hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies in a preheated oven for 10-12 minutes, or until the edges are just beginning to brown. Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Real deal Irish shortbread cookies are a delicious and classic treat. They are perfect for any occasion, and they are sure to be a hit with everyone who tries them.
