I'm in love with this raw vegan banana pudding, actually, it's one of my favorite desserts, especially if I add lots of fresh raspberries on top.

Steps:
- You can soak the cashews overnight (I didn't), but it's totally up to you. If your food processor or blender is not very powerful, I recommend you to soak them.
- Place all the ingredients in a food processor (or a blender) and blend until smooth. Chill for at least 2 hours.
- Before serving, top with your favorite toppings (I added fresh raspberries and chopped cashews).

RAW VEGAN BANANA PUDDING
I had been wanting to make a raw treat for my sister, so we decided to make banana pudding yesterday. We just topped ours with leftover raw graham cracker crust crumbs but now that I think about it, it would probably be great with raw chocolate ganache, nibs, berries, or even more sliced bananas! :) For more recipes like this, including raw vegan graham cracker crust, visit www.bellaraw.blogspot.com.

Steps:
- Blend banana and avocado until smooth and fluffy.
- Chill til ready to serve, at which time top with pistacios as a garnish.
Tips:
- For a creamier pudding, use frozen bananas that have been thawed for a few minutes.
- Soak the cashews in water for at least 4 hours, or overnight, to soften them. This will make them easier to blend into a smooth pudding.
- Use ripe avocados for a richer, creamier pudding. Feel free to use more or less avocado, depending on your desired consistency.
- Add in your favorite mix-ins, such as chia seeds, hemp seeds, cacao nibs, or chopped nuts, for a more flavorful pudding.
- To make a chocolate pudding, add in 1/4 cup of cocoa powder. For a peanut butter pudding, add in 1/4 cup of peanut butter.
- To make individual servings of pudding, pour the pudding into small jars or ramekins. Top with sliced bananas, granola, or chopped nuts.
Conclusion:
Raw vegan banana pudding is a delicious, healthy, and easy-to-make dessert. It's perfect for a quick snack or a special occasion. With its creamy texture and sweet banana flavor, this pudding is sure to be a hit with everyone who tries it.
