RAVIOLI IN GINGER TOMATO BROTH

Ravioli in Ginger Tomato Broth image

I don't believe I ever saw "ravioli in broth" as an appetizer until I dined in LaSalle County, IL. This is a wonderfully rich-flavored recipe, and not for the "wine-faint-of-heart". It makes an elegant beginning for a special dinner; the flavors are complex and I would suggest a simple entree to follow; perfectly grilled fish or chicken would be ideal.

Categories     Vegetable

Time 30m

Yield 6 serving(s)

Number Of Ingredients 8

1 (9 ounce) package cheese ravioli or 1 (9 ounce) package spinach ravioli (meat-filled ravioli is a little too heavy for this dish and I like to keep it vegetarian as well)
1 1/2 cups dry white wine
4 cups vegetable broth
1 medium onion, sliced paper-thin
2 tablespoons minced fresh jalapeno peppers
1 1/2 teaspoons ground ginger
1/3 cup shredded fresh basil leaf
1 tomatoes, peeled,seeded and chopped

Steps:

  • Prepare ravioli according to package directions (generally, cook in boiling salted water for about 6 minutes for fresh pasta).
  • Reserve.
  • Combine wine, broth and onion and bring to a boil, skimming any foam.
  • Reduce heat and add ginger; simmer 10 minutes.
  • Add jalapeno, tomato and basil; heat through.
  • To serve, place 4 or 5 raviolis in the bottom of a bowl; ladle broth over.
  • (This is also impressive with one very large ravioli in the bottom of a shallow serving bowl.).

Tips:

  • Make the ravioli dough ahead of time: You can make the dough up to 3 days in advance and store it in the refrigerator. This will save you time on the day you want to make the ravioli.
  • Use a variety of fillings: You can use any type of filling you like for your ravioli. Some popular fillings include ricotta cheese, spinach, mushrooms, and meat.
  • Be careful not to overcook the ravioli: Ravioli should be cooked until they are al dente, or slightly firm to the bite. Overcooked ravioli will be mushy and bland.
  • Serve the ravioli in a flavorful broth: The broth is an important part of this dish. Make sure to use a flavorful broth that will complement the ravioli.
  • Garnish the ravioli with fresh herbs: Fresh herbs, such as basil or parsley, will add a pop of color and flavor to your dish.

Conclusion:

Ravioli in Ginger Tomato Broth is a delicious and versatile dish that can be enjoyed by people of all ages. It is a perfect meal for a special occasion or a weeknight dinner. With a little planning and effort, you can easily make this dish at home. So next time you are looking for a new and exciting recipe, give Ravioli in Ginger Tomato Broth a try!
